Healthy Eats: Avocado Toast
Welcome to Healthy Eats! This series will show you the recipes that I love. This says a lot considering that I don’t like a lot of food. If you have a recipe you want me to try, send it my way. I’m always looking for new meals to try.
This is a post I never thought I’d be writing. I was convinced that I didn’t like avocados. There was no real evidence to support this, because I never had even tried avocados. About a year ago I tried avocado toast for the first time. I didn’t love it, but at least I tried it right?
It’s no secret that I have majorly let myself go these past two years. I regrouped a few months ago when I started Strong Girl Summer. I promised myself that I would be more willing to try things that I haven’t yet and give second chances to meals I didn’t like at first. One of those was avocado toast
Giving Avocado Toast A Second Chance
When I made avocado toast the first time I just added an egg to it. This time I decided to add turkey bacon. I believed that made all the difference in me liking it. Avocado toast started to become a staple breakfast for me. A year ago if you told me I’d be having avocado toast for breakfast almost every day, I wouldn’t have believed you. I’ve shown so much growth in my eating choices.
Taking It A Step Further
For the past two months, I’ve been working with a nutritionist through the Wellory app. She has helped me transform my avocado toast by making it the perfectly balanced healthy meal that I have today. It started by trading the whole wheat bread to Ezekiel bread. Then she suggested that I add spinach to the meal.
I feel so great whenever I make avocado toast for breakfast. Starting off the morning with a healthy option makes me feel so much prouder of myself. I know there are more moments like that coming, I just have to take things day by day and keep making progress.
