Healthy Eats: Festive Recipes

Welcome to Healthy Eats! This series will show you the recipes that I love. This says a lot considering that I don’t like a lot of food. If you have a recipe you want me to try send it my way. I’m always looking for new meals to try.

Festive treats

It’s been a while since I wrote a Healthy Eats post. I’ll be publishing them more in 2021. Baking is a major activity during this time of year, so how could I not try some new festive treats? These are the recipes that I believe will be a staple in my house, both this year and more Christmases to come.

Chocolate Peppermint Cups from Cookie + Kate

The first recipe on my list of festive treats are Chocolate Peppermint Cups. Chocolate and peppermint might be my favorite Christmas combo. So when I saw this I knew I needed to try it. These were very simple to make, and reminded me of a York Peppermint Patty. I used mini Christmas baking cups to add a festive touch.

Sugar Cookie Truffles from Love Sweat Fitness

This was such a fun recipe to make. It has two parts to it. First you have to make the cookies, you can find the recipe in the Holiday Survival Guide. Then once the cookies are done you turn them into crumbs to make the truffles. You can find the truffle recipe by signing up for the free Sleigh The Holiday challenge. 

Even though my end result wasn’t picture perfect, I absolutely loved these truffles. They taste so good! I can’t even tell that there is minimal sugar in them. I didn’t have sugar-free white chocolate chips, otherwise they would be sugar free.

Spinach Balls from Sweet As Honey

This recipe is different from the rest on this list, but I know there are some savory fans out there. This one’s for you. This recipe was simple to make and so flavorful. I think it would make a great snack anytime, but especially before something like a big dinner. These Spinach Balls will be a regular in my house now. 

Whole Wheat Gingerbread Pancakes from Cookie + Kate

I’m usually awful at making pancakes, but this recipe was so good that I had to try it. It ended up going really well! I didn’t mess up one pancake! This recipe is sure to fill your home with the smell of  holiday cheer. It tastes as amazing as it smells as well. I think it would be a perfect weekend breakfast or brunch. It pairs really well with maple syrup. I really love this sugar-free syrup

Peppermint Fudge No Bake Energy Bites from Running In A Skirt

I haven’t made these festive treats yet, as I’m writing this, but I definitely plan on trying these this year. I’ll let you know what I think when I do. So keep an eye out on Instagram.
