Healthy Eats: Cauliflower Edition
Welcome to Healthy Eats! This series will show you the recipes that I love. This says a lot considering that I don’t like a lot of food. If you have a recipe you want me to try send it my way. I’m always looking for new meals to try.

What do pizza, mac n’cheese, and tater tots all have in common when you are eating healthy? At first glance you would think this was a post on things you shouldn’t be eating while living a healthy lifestyle. However, this is not that kind of post. Cauliflower is the theme of today’s post. Before my weight loss journey began I don’t think I’ve ever given cauliflower a second glance. Now I know that this vegetable can do amazing things when it comes to the kind of foods you can eat while trying to live a healthy lifestyle.
I’m a picky eater so when it comes to eating healthy I struggle with finding meals I actually like. A lot of my meals come from finding healthier swaps of food that I know I like. Here are three of these swaps that have become staples in my weekly meal prep:
Mac ’n Cheese

This is what started the whole cauliflower journey. There are many ways you can make this dish that I like to call moc ‘n cheese. For me the simpler the recipe, the more likely I will make it. I found a recipe from Low Carb Yum that is quick and simple to make. I typically like to make this for the week and pair it with my lunch. It’s yummy for when you are wanting some comfort food.
Tater Tots

I was introduced to cauliflower tots first by the pre-made frozen type. I loved it so much, but I knew there had to be some way to make them because I’ve always heard it’s healthier to make your own food and not rely on the frozen variety. Plus, the kind I got wasn’t always there, which is frustrating when you meal plan ahead of time. Thus began my internet search where I found this recipe from Gimme Delicious. I left a few ingredients out, like the bell pepper and parsley, but it still tasted great.
Pizza

Now we come to my favorite healthy meal swap. PIZZA!! Yes you can eat pizza while losing weight thanks to cauliflower crusted pizza. I’ve found a great recipe from The Stay At Home Chef. I seriously make this almost once a week. So tasty! I haven’t experimented much with different toppings yet, but that’s something I am planning to do soon.
